Spring Roll Fillings we like:
lettuce or greens of your choice
- 3/4 Powdered peanut butter
- 1-2 tbsp low sodium soy sauce (I dont use this because its too salty for me these days so I just leave it out)
- 1 tbsp rice vinegar
- 1-2 tbsp maple syrup
- Juice of half a lime
- 1/2 tsp coconut extract (optional)
- Pinch of ginger, fresh or powdered
- Sambal Oelek chili paste (optional)
3 cups cooked brown rice
8 oz shiitake mushrooms
1tbsp minced garlic
2 green onions thinly sliced
sambal oelek (chili paste) optional and to taste if you like it spicy
coconut aminos teriyaki sauce or coconut aminos garlic sauce for seasoning. You may also use a low sodium soy sauce as well.
sesame seeds for garnish. (optional)
Water saute the mushrooms and garlic until mushrooms are tender. Stir in rice and onions and heat through. Serve with chili paste, and sauce of choice and garnish with sesame seeds if desired.
Chocolate Cherry Nice Cream:
2 frozen bananas chopped
1/2 cup frozen cherries
1 tbsp cocoa powder
1/4 cup - 1/2 cup plant milk (I use plain soy milk)
walnuts for topping (optional)
Blend all ingredients excepts walnuts in blender until smooth, and top with walnuts if using.
